Red veggie stew

Yesterday I returned late from teaching in Kalix and this morning it was serious juicing. Juicing is an excellent way of recuperating.  Some hints from The Juicebrothers. Todays lunch was chosen by the colour.  So many ways to decide what to have for lunch, colour is one of them.

Red veggie stew for two:
3 belly peppers

6 tomatoes
3 tbl oliv oil
1,5 tbl balsamico
1,5 tsp salt
2 dl pine seeds
1 sellery stalk
10 cm leak
Fresh basil for garnish

Chop the tomatoes fine and put them in a sieve to drain.  Chop half of a pepper, the leak and the stalk of sellery as fine as possible.
Blend the rest of the peppers, oil, balsamico and the pine seeds to a smooth sauce.  test the taste! Drink the tomato water as an aperitive and mix the tomatoes and the other chopped ingredientes with the sauce.  Garnish with fresh basil.
